A wine of epic distinction and aromatic complexity, this epic Pinot Noir delivers notes of ripe, red fruits enveloped in delicate spicy nuances through to a palate of finely structured tannins. Smooth and silky, with a long, elegant finish. The grapes were hand-picked and carefully sorted in the vineyard into small crates to avoid crushing, followed by a second meticulous selection on the sorting table. The grapes were then destemmed and gravity-fed into traditional open vats. Fermentation took place with indigenous yeasts, followed by maceration which lasted for three weeks under temperature-controlled conditions. The wine was aged in French oak barrels, of which 30% were new, for 14 months. The wine was bottled without fining and generally without filtration.
In 1820, Albert Morot set up his negociant business in Beaune. Between 1984 and 1999 the estate was managed by Françoise Choppin, who discontinued the negociant activity in order to concentrate on its vineyards and winemaking. The domain covers eight hectares of vineyard, divided into 10 appellations and is certified organic from the 2015 vintage. In January 2000, Geoffroy Choppin de Janvry, an agronomist engineer specialising in viticulture and oenology, took over the estate from his great aunt. Adopting a minimal intervention approach
