Another collection of unicorns from Tillingham's former winemaker Ben Walgate's private stash, this time 3 back vintages of the British banger, Pinot Blanc (2019, 2020 and NV).
Tillingham Pinot Blanc 2019, One batch of grapes fermented in 2 parts, 69% Pinot Blanc, semi-carbonic maceration for 5 days before pressing and fermenting in 4th fill barrel 31% Pinot Blanc, whole bunch press and fermented in Qvevri. Both ferments long and slow over winter before blending back in spring and bottling under gravity. Waxy lime with a touch of white floral character on the nose. Textured, saline, and slightly oily on the palate with zesty acidity and a mineral grip. 10% ABV
Tillingham Pinot Blanc 2020, Brushed green gold in appearance. Ripe and rich, reminiscent of an apricot lassi. Textured and detailed; good weight with a refreshing acidity. Vegan friendly. Gluten free. Organic. 11% ABV
Tillingham Pinot Blanc NV, Waxy lime and a touch of white floral character on the nose. Textured, saline and slightly oily on the palate with zesty acidity and a mineral grip. The Pinot Blanc is made with 50% whole bunches pressed and fermented in qvevri and 50% crushed and de-stemmed with four days skin maceration. 10.5% ABV
