First up in this trio of dreams is Baglio Antico Rosso, a seriously tasty Nero d'Avola from the masters of natural wines, Ciello. Their vineyards are located high up in the Sicilian hills where all wines are certified organic. Medium body with rich black fruits, spice, and a bit of funky spritz to it. It's unfined and unfiltered using only natural yeasts resulting in a fresh Nero d'Avola that has an underlying richness and intensity.

Next up is a collab between Les Caves de Pyrene and Luca Hodgkinson of Metic. A juicy blend of Carignan and local variety Pais. Pais adds an amazing colour while the Carignan provides spicy dark fruit. The result is a moreish red packed with black and red berry fruit, pepper spice, and a delicate note of violet on the finish.
