Frantz Saumon’s La Cave Se Rebiffe is a zippy, zingy and energetic natural rosè sparkling wine of unique character and personality. Made from organic and biodynamic Gamay and Grolleau grapes grown in Loire’s Montlouis, it sees wild fermentation and is bottled with its sugars and yeasts, which will then allow for the second fermentation. Herbal and fruity vibes intertwine with accents of pink grapefruit, lime zest, and mineral undertones.
Before embarking on his wine career in 2001, Frantz worked as a forest ranger in Canada and France. Then, as we said, in 2001, came the thunderbolt on the road to MontLouis and decided to buy a small plot of 3 hectares of vines. Since then, Frantz has established himself as one of the best producers in the Loire region, doubling the number of hectares on his estate, now 6, and significantly refining his production technique, which is now truly enviable, but still with a natural, non-interventionist approach.
