Camillo Donati specialises in making funky fizz. The vineyard is located in Parma, Italy about 300 meters above sea level and is organic as well as biodynamic and all the processes are done by hand. Malvasia Secco - the skins are left on for fermentation and then it's re-fermented in bottle. It's not disgorged giving it an amber haze. The wine pops with fruit, herbs, dried apricot and is seriously drinkable.
