Full-on unicorn situation right here, a magnum of the finest Ploussard from legendary producer Tony Bornard. 100% Ploussard from vines of 45 to 80 years old, organically grown and planted on pink iridescent marls, in the place called "Les Chambines". Manual harvesting, total destemming, fermentation, and maceration in 2400 liter barrels. Punching down and pumping over once a day for 3 weeks, one month of maceration, pressing, and aging in the same tuns. Darker and more seductive than your reg.
Philippe Bornard lives in the oldest house in Pupillin near Arbois in the Jura region and farms the vineyards of his father, who used to sell grapes to nearby winemakers and the local cooperative. Luckily, Philippe was persuaded by the legendary Pierre Overnoy and began producing his own wine. He quickly became one of the most interesting winemakers in the region. His winemaking career started full time in his fifties, and since 2017 he has been officially enjoying his pension. He is still helping his son Tony though, who will one day take over the entire production.
