FRESH IN THE BUILDING! Named after Davide’s daughter, this wine is a 50/50 blend of Garganega and Pinot Bianco from limestone soils on the Colli Berici, south of Vicenza. The Garganega spends 4 days on the skins with the Pinot Bianco spending 6 days, after blending the wine spends 6 months in concrete vats to finish its journey to Natural Wine stardom. The wine itself is a joyful white, fruity (orange zest, peach, and pineapple) with a touch of balsamic herbs on the nose. Extremely balanced on the palate with a clear expression of the soil (high pH limestone) in its long salty finish.
